Coco sugar, also known as coconut sugar, is a sweetener derived from the sap of the coconut tree. It has become a popular alternative to traditional sugar due to its lower glycemic index and higher nutrient content.

To produce coco sugar, the sap is collected from the flower buds of the coconut palm tree. The sap is then boiled down to remove excess moisture, resulting in a thick syrup. The syrup is further reduced until it forms crystals, which are then packaged and sold as coco sugar.

When using coco sugar, it is important to keep in mind that it has a different flavor profile compared to traditional sugar. It has a slight caramel-like taste and is slightly less sweet. This means that you may need to adjust the amount used in recipes compared to what is called for with traditional sugar.
